Aloo Shimla Mirch recipe is such an easy & quick recipe capsicum recipe and one of my favorite recipes. Capsicum is called Bell Pepper in some parts of the world. This Bell Pepper recipe is a North Indian Punjabi recipe. You can make this Capsicum Potato recipe without onion, tomato as well. It will equally taste delicious. It can be served as a side dish with Rice & lentils (Dal) or with Chapati (Roti) or Parathas.

Ingredients :
1. Oil 2 Tbsp
2. Cumin Seeds 1 Tbsp
3. Black Pepper 6-7
4. Green Chilies 1-2 (Chopped)
5. Garlic 1 Tbsp (Chopped)
6. Ginger 1 Tbsp (Chopped)
7. Asafoetida 1/4 Tsp
8. Onions 1 Cup (Chopped)
9. Potatoes 2 Cups
10. Turmeric 1 Tsp
11. Coriander Powder 2 Tbsp
12. Cumin Powder 1 Tsp
13. Red Chilli Powder 1 Tsp
14. Tomatoes 1 Cup (Chopped)
15. Capsicum 2 Cups (Chopped)
16. Salt to Taste
17. Garam Masala 1 Tsp
18. Coriander Leaves 1 Tsp
Instructions:
1. In a pan, add 2 Tbsp Oil, 1 Tbsp Cumin Seeds, black pepper 6-7 & Saute for a minute.
2. Now add 1-2 Chopped Green Chilies, 1 Tbsp Ginger, 1 Tbsp Garlic, 1/4 Tsp asafetida and Saute for 1-2 minutes on low-medium flame.
3. Add 1 cup chopped onions and saute for 3-4 minutes until transparent and add 2 Cups of Potatoes. Mix potatoes with onions and cook for 10 minutes and stir occasionally.
4. Next add 1 Tsp Turmeric, 2 Tbsp Coriander Powder, 1 Tsp Cumin Powder, 1 Tsp Red Chilli Powder, and Mix well.
5. Add 1 Cup Chopped tomatoes and Cook for 3-4 minutes until the tomatoes are soft.
6. Lastly, add Green Capsicum (Bell Pepper) cut into cubes or roughly chopped.
7. Mix all together and Cook for 5 Minutes minutes on Med-Low heat. Also, add salt to taste, 1 Tsp Garam Masala and cook for another 5-7 Minutes.
8. Garnish with Coriander Leaves. Quick and easy Aloo Shimla Mirch (Potato Capsicum) is ready to serve.

Complete Step by Step Instructions With Images To Make Delicious Homemade Aloo Shimla Mirch Recipe:
1. In a pan, add 2 Tbsp Oil.
2. Add 1 Tbsp Cumin Seeds.
3. Add black pepper 6-7
4. And Saute for a minute.
5. Now add 1-2 Chopped Green Chilies.

7. 1 Tbsp Ginger
8. Saute for 1-2 minutes on low-medium flame.

19. Add 1 Tsp Red Chilli Powder
20. And mix well.
21. Add 1 Cup Chopped tomatoes
22. Mix well.
23. And Cook for 3-4 minutes until the tomatoes are soft.
24. Let the potato semi-cooked properly.
25. Lastly, add Green Capsicum (Bell Pepper) cut into cubes or roughly chopped.
26. Mix all together
27. And Cook for 5 Minutes minutes on Med-Low heat.
28. Also, add salt to taste
29. Add 1 Tsp Garam Masala
30. Mix again properly.
31. And cook for another 5-7 Minutes.
32. Garnish with Coriander Leaves.
33. Quick and easy Aloo Shimla Mirch (Potato Capsicum) is ready to serve.
34. Take it out in a serving bowl.
35. Goes well with Roti, Chapati, Naan, or any type of Bread.
