Lauki Kofta is a dish which is made of fried kofta’s (Dumplings) in an onion & tomato-based curry sauce. Lauki (Bottle guard) is a veggie which either people like it or hate it. Ingredients
For the Kofta
1. 3-4 Cups Oil for frying
2. 1 Bottle Guard
3. 1 Cup Gram Flour
4. 1 Teaspoon Red Chili Powder
5. 1 Teaspoon Fennel Seeds
6. Salt to Taste
For the Curry
1. Cumin Seeds 1 Tsp
2. Black Pepper 5-6
3. Dry Chili 1
4. Green Chilies 2-3 (finely Chopped)
5. Onion Paste 1 Cup
6. Ginger/Garlic Paste 1 Tbsp
7. Asafoetida powder (Hing) 1/4 Tsp
8. Turmeric 1 Tsp
9. Red Chili Powder
10. Coriander Powder 1 Tbsp
11. Dry Mango Powder 1 Tsp
12. Tomato Puree 1 Cup
13. Salt to Taste
14. Dry Fenugreek Leaves 1 Tsp
15. Garam Masala 1 Tsp
16. Cilantro to garnish
Instructions:
For the Kofta’s
1. Peel the skin of Bottle Guard (Lauki) & Grate it.
2. Squeeze Water completely, as shown in the video below.
3. Add 1 cup Gram Flour (Besan), 1 Tsp Red Chili Powder, Fennel Seeds & Salt to taste. Mix Well & Keep Aside (Thick Consistency).
4. Heat the oil in a pan for frying Kofta’s (High flame).
5. Deep fry Koftas until golden brown. Once golden brown takes out & keep aside on absorbent paper to soak the extra oil.
For the Curry
1. Heat the pan and add 1 Tbsp of oil.
2. Add Cumin Seeds and let it crackle then add Black Pepper (5-6), 1 Dry Red Chili & 1-2 Green Chili (Finely Chopped ) & Saute for a Minute.
3. Now, Add Onion Paste, Ginger Garlic Paste & 1/4 Tsp Asafetida, and saute 2-3 Mins.
4. Also, add 1 Tsp Turmeric, 1 Tbsp Kashmiri Red Chili Powder, Coriander Powder & 1 Tsp Dry Mango Powder.
5. Mix Well & Simmer 5 Minutes until oil separates.
6. Add 1 cup Tomato Puree (Approx 4 Large Tomatoes) & Mix Well.
7. Once the oil separates, then add 1 Cup Water & Simmer 5 Minutes.
8. Lastly, add Salt, Dry Fenugreek Leaves (Kasturi Methi), 1 Tsp Garam Masala & Mix. Ready to serve.
9. Add Koftas at the time of serving. It will go very well with Jeera Rice, Roti or any Bread.

Complete Step by Step Instructions With Images To Make Delicious Homemade Lauki Kofta Recipe:
1. Take a Bottle Guard (Lauki) & wash it properly.
2. Peel the skin of Bottle Guard (Lauki) & Grate it.
3. Grate the bottle guard for Lauki Kofta.
4. Squeeze Water completely.
5. Add 1 cup Gram Flour (Besan).
6. Tsp Red Chili Powder.
7. Fennel Seeds
8. And add salt to taste.
9. Mix Well & Keep Aside.
10. It should have a thick consistency.
11. Heat the oil in a pan for frying Kofta’s (High flame).

13. Also, add 1 Tsp Turmeric.
14. Add 1 Tbsp Kashmiri Red Chili Powder
15. Add Coriander Powder.
16. And add 1 Tsp Dry Mango Powder.
17. Mix Well
18. And Simmer for 5 minutes until oil separates.
19. Add 1 cup Tomato Puree (Approx 4 Large Tomatoes)

23. And Simmer for 5 Minutes.
24. Lastly, add salt
25. Add Dry Fenugreek Leaves (Kasturi Methi)
26. Mix once again.
27. Add 1 Tsp Garam Masala
28. Add Koftas at the time of serving.
29. Add some cilantro for garnishing.
30. Take out in a serving bowl.
31. Garnish with cilantro.
32. It will go very well with Jeera Rice, Roti or any Bread.
